World’s First Counterweight Balanced Naan Roti Bread Removal Tandoor set
Driven by curiosity and built on purpose, this is where bold thinking meets thoughtful execution. Weight balanced skewers for the tandoor are unlike regular skewers for naan bread removal. These stainless-steel skewers or famously called Jodi (a pair) is required to remove the bread (naan, roti etc.) from the walls of the tandoor clay oven.
Experience is required to learn the art of removing naan bread just before they are ready in a tandoor, so before they fall the chef must remove them right in time. Handling 2 skewers with one in each hand and juggling to get the right grip thorough pricking after scrapping put a lot of stress on hands.
When one sees it happening it feels easy but then there is years of experience behind that makes it look easy. During the process the hands take the toll as each naan bread is to be removed from a different angle and depth and when doing 400 to a 1000 naan breads a day the hands do take a toll.
It’s just that no one till day bothered about it, one Sunday brunch and it changed it all – was watching the chef churn out a few hundred breads within an hour from multiple tandoors using the Jodi skewer set. Just went on to praise him and he simply replied ‘ab toh aadat ho gayi hai’ (Now it’s a routine) but the hands get tired and I must massage them before going to bed.
We manufacture these skewers in-house by using skill set and machinery and have the largest skewer manufacturing for tandoors in the world. Over the years we have improvised this great tandoori tool by making the scraper using machines and then grinding it by hand, so it reduces the impact on the tandoor clay walls thus increasing the clay pot life. The tandoori naan prick is now bent using CNC angle machine so the right angle is achieved for the pricking and making it easier for the tandoori chef and the tandoor clay pot but this fatigue problem solving was new and we could not think of a solution. After discussions with tandoor chef’s the world over we still could not come up with an idea that would keep the practiced tandoori tool same and assist in reducing the fatigue.
While researching for the solution to the fatigue of the tandoori chef’s hands another problem propped up – the slippage of the skewer especially from the hands of the new learning chef’s on the tandoor oven.
Bingo – while we solved this slippage issue on the skewers we thought of balancing the skewer right so atleast it would reduce the fatigue if not remove it all. Several trials and pass on of skewers to tandoori chefs and we were able to create ‘The world first and only tandoori balanced skewer jodi set’.
Several sets were produced right and sent to tandoori chef’s all around the world – especially to those who run buffets or multiple tandoors and after each of them wanted a set for their chef friend or colleague in the tandoor industry, we knew we had the right product. A lot of Thankyou came in from the tandoor users, and we finally launched them for the world market.
